All doughs mixed by hand or slow spiral. No additives, no improvers. Just flour, water, salt, and time.

Prove
24–72 hours cold fermentation. Slow proving builds flavour complexity and digestibility naturally.
Step 04
Bake
300°C stone deck ovens. Each loaf scored by hand. Out of the oven at 5am. On the shelf by 7am.
